Chicken Prawn Dumplings Recipe

Hi, I’m Sammy.
Dumplings have always been my weakness. When I was a kid, I’d sit at the table with my family, folding dumplings together. And yes… I was the one who always “accidentally” broke a dumpling just so I could eat it first 😂
This version is my go-to: juicy chicken + bouncy prawns + a hit of sesame oil. Golden bottoms, steamy tops, crunchy outside and soft inside — that’s the Sammy way.
Ingredients
250 g chicken mince
200 g prawns (peeled & deveined)
5 shiitake mushrooms, finely chopped
2 spring onions (white + green parts)
2 tsp garlic, minced
2 tsp ginger, grated
1 tbsp soy sauce
½ tbsp Shaoxing wine
½ tbsp oyster sauce
Pinch of sugar
Pinch of salt
½ tsp white pepper (or black pepper)
1 pinch baking powder
1 tbsp sesame oil

How to Make Dumplings
1️⃣ Prep and Chop
Finely chop spring onion, mushroom, garlic, and ginger. Smash prawns into a paste.
2️⃣ Season
Mix with chicken mince, soy sauce, Shaoxing wine, oyster sauce, sugar, salt, pepper, baking powder, and sesame oil. Rest for 30 minutes.
3️⃣ Wrap
Place filling in the centre of the wrapper, wet edges with water, fold, and seal tightly.
4️⃣ Cook Dumplings
Pan-fry dumplings in oil until golden, add hot water, cover, and steam until cooked through. Finish with a crispy bottom.

Don’t overseason — dipping sauce will take care of flavor.
Oyster sauce + sesame oil = flavor explosion.
Dumplings don’t have to look perfect. In fact, the messy ones always taste like home.
